St. Patrick’s Day Smoothie… ‘Tis, Green, Green, Green!

Whether you are Irish or not, ’tis always fun to go “green” on St. Patrick’s Day.  It’s also the perfect day to sneak Vitamin A-loaded green into your family’s diet!

Enter the delicious St. Patrick’s Day Shamrock Smoothie!  (Click on the recipe title for the full recipe.)

And after March 17th is over, we can call it something else.  If you have young children, you can call it the Ninja Turtle Smoothie, or the Hulk Smoothie.  Go on, use your imagination!  Meeting children in their world will have more success than trying to convince them to eat something because it is “healthy.”

The kale in this recipe gives it the minty green flavor and rocks this smoothie to a very nutritious level.  While this recipe makes a “blender-full” for the whole family, the 2 cups of kale used has only 66 calories, yet provides plenty of calcium, Vitamins A, C, K, iron, folate, omega 3s, magnesium, fiber and protein.  And that’s before we added the other ingredients of fruit, soy milk, and protein powder.  If you don’t like some of the ingredients, feel free to make it to your liking.  Smoothies are the perfect snack for experimentation.
